During Thanksgiving about 200 million pounds of turkey, 400 million pounds of mashed potatoes, and 300 million pounds of stuffing will be thrown away. As I’ve mentioned before, food that’s thrown away and rots in the landfill is terrible for the environment. When food rots in an airless environment, such as a landfill, it releases methane which is 25 times more potent a greenhouse gas than carbon dioxide. So, to prevent your leftovers from heading to the landfill, use some of these ideas instead.
Breakfast Benedict, Hash, or Burrito
I’m pretty sure you can add poached or scrambled eggs to anything and it’d make a delicious breakfast. For a Thanksgiving Benedict put these times together:
- Dinner roll or biscuit
- Turkey
- Poached Egg
- Cranberry Sauce or Gravy

Better yet, hash it out and then wrap it in a tortilla to make a Thanksgiving Breakfast Burrito!
Leftover Casserole
Throw everything in a casserole dish, give it a stir and bake it with cheese! I mean, who can resist a gooey-cheesy casserole?
A few variations would be to add tortillas for leftover enchiladas or pasta for a leftover lasagna!
Turkey Sandwiches
I’m sure this might seem old and boring to you, but hear me out. My mother-in-law makes a bomb-ass cheese ball and my sister-in-law makes fresh Parker House Rolls. So, what I look forward to the day after Thanksgiving is a Parker House Roll, Turkey, and Cheese Ball Spread sandwich. Sometimes I throw on some cranberry sauce. It’s delicious. I wait all year for this!
Turkey & Potato Soup
Take the turkey bones to make a broth or just add some canned broth to potatoes and turkey to make a delicious soup!
Turkey Pot Pie
Take some turkey, vegetables, add cream of chicken and bake with a crust for some turkey pot pie!
If all else fails, please compost your leftovers if you can’t use them before they spoil. By composting them, they can decompose in an air-filled environment and put nutrients back into the earth.
